The most well-known non-stick coating is PTFE, better known as Teflon. This synthetic coating can be dangerous if it overheats or is damaged (especially by metal utensils).
Ceramic non-stick coating consists of a layer of ceramic (silica, clay, and other inorganic minerals) on the cooking surface and does not contain toxins, unlike conventional non-stick coatings. However, it can lose its non-stick properties over time.
Finally, cast iron and carbon steel pans are other naturally non-stick pans thanks to a seasoning with vegetable oil, which should be renewed if non-stick performance declines.
The Italian brand also offers a range with a non-adhesive, water-based, non-toxic and inert Greenstone® coating.
PFOA and PFOS, also known as "eternal pollutants" because they are extremely resistant, are two of the most widespread per- and polyfluoroalkyl substances (PFAS), yet they are classified as "carcinogenic to humans" and "possible carcinogen." A bill aimed at banning the manufacture of products containing PFAS in certain sectors has been studied, but MPs excluded cookware from this ban during a vote in April 2024 at the National Assembly. It appears that, as long as the coating is not damaged, the migration of PFAS into food is very low. On the other hand, damaged pans can release thousands of particles during cooking, so it is strongly recommended to replace them!
When looking for a healthy non-stick pan, it's important to choose materials that don't release toxic substances during cooking. Here are the most recommended alternatives:
1. Ceramic stoves
Ceramic-coated pans are a good option for avoiding harmful substances like PTFE or PFAS. Made from inorganic minerals (silica, clay), they don't release toxins and are naturally non-stick. However, their effectiveness can diminish over time, and they require careful maintenance.
2. Cast iron and carbon steel pans
These materials are naturally non-stick when thoroughly seasoned with vegetable oil. Unlike PTFE-coated pans, they pose no risk of releasing toxic particles and improve over time. They're an excellent choice for healthy, sustainable cooking.
3. Pans with innovative, non-toxic coatings
Some brands now offer alternatives to traditional coatings, such as Greenstone®, a water-based, non-adhesive coating that's guaranteed non-toxic and inert. These new technologies help avoid exposure to PFAS and other controversial substances.
4. Stainless steel pans
Although not inherently non-stick, stainless steel pans are a healthy and durable option. They allow for cooking without the risk of chemical transfer and are particularly suitable for cooking that requires thorough searing.
Non-stick pans can pose health risks if overheated or if their coating is damaged. When the coating is scratched or heated to high temperatures, chemicals can be released. Therefore, it is recommended to follow the manufacturer's instructions and replace worn pans.
The lifespan of a non-stick pan varies depending on the quality of the product and its maintenance. Generally, a good quality pan can last between 3 and 5 years. However, some users report prolonged use beyond this period with proper maintenance.
To extend the life of a non-stick pan:
Materials such as cast iron, stainless steel, and iron are renowned for their durability. Although they may be heavier, they offer excellent heat distribution and a long lifespan.
Steel pans are often recommended as a natural alternative to Teflon. They are generally free of chemicals such as PFAS and offer satisfactory non-stick properties after seasoning.
Although some pans are labeled as dishwasher safe, it is best to hand wash them to preserve the coating.
The size depends on your cooking needs. For a single person, an 8-inch pan may be sufficient, while a family will need a 11-inch or larger pan.
A higher weight may indicate better quality and even heat distribution, but it can also make handling more difficult.
Use proper utensils, avoid overheating, and clean the pan properly to keep the coating in good condition.
