Red cabbage, goat cheese and honey tatin
Enough to reconcile even the most reluctant to eat red cabbage!

Recipe for one person:
- Cut a nice slice of red cabbage about 1 cm thick (super simple with this great Spanish knife !)
- On a baking sheet (ideally a round or rectangular version), place baking paper. On a surface area equivalent to that of your cabbage slice, place 2 tbsp of olive oil, 1 tbsp of balsamic vinegar and 1 tsp of honey. Mix, always on a surface area equivalent to that of the cabbage slice.
- Place the cabbage slice on this mixture
- Cover the cabbage slice with puff pastry and seal it tightly around the cabbage. Lightly prick the pastry on top.
- Bake for about 30 minutes at 220° (depending on the oven - the pastry should be golden and you should see the caramelized juice from the cabbage coming out of the sides...!)
For the goat cheese, I added it after because I found that it was missing a little something. So I put a slice of goat cheese covered with a little honey to roast for about 10 minutes at 200°. But I think you can make a little space for it directly embedded in the cabbage and it's even better!! I would like feedback from those who try it!
