Round perforated pie dish with low edge, in blued steel sheet, ideal for cooking tarts, puff or shortcrust pastry, pizzas, etc.
Blued sheet metal surface by heat treatment: temporary protection against oxidation. Perforations: shape, size and dispersion studied to optimize the circulation of hot air. Excellent heat communication: facilitated Maillard reaction for golden and crispy pastries. Shorter cooking time. Durable and non-deformable pie dish.
Tip: Either combine with a baking mat or paper, or grease well before use. Do not use for cold work, or with liquid or semi-liquid preparations.
Care: scrape, brush after use. Lightly grease to protect the sheet metal. Store in a dry place. Do not put in the dishwasher. Do not wash with detergents.
