Gourmet beetroot, feta and carrot toast

A tartine generously garnished with feta and roasted beetroot cream, honey-glazed carrots, feta and salad. A treat! Follow me on Instagram for other recipes!

To start, peel and chop your carrots, beets, and an onion. Place them in a roasting pan and add a drizzle of olive oil, a drizzle of honey, about a tablespoon of balsamic vinegar, salt and pepper and bake at 200° for about 20 minutes.

When they come out of the oven (the vegetables should have caramelized a little), mix the beets with a few carrots, feta, lime juice and a little water. Adjust the quantities according to your tastes (especially for the lemon and feta).

Quickly toast some slices of lightly oiled country bread in the oven. When they come out of the oven, spread them with beetroot-feta cream, add the carrots, a little salad and a few pumpkin seeds if you have any.
