What to do savory with egg whites?

A pancake/omelette! A "gomelette"?!

Nothing could be simpler: you beat your eggs until stiff. As soon as they are firm enough, season them! I chose Espelette pepper, herb salt and parmesan :)

Arrange the whites in a pancake on an oiled pan and turn over once the front is golden brown. Same for the back!

We add poached yolk, salmon, small seeds... It couldn't be more airy!
