Roasted pumpkin with mascarpone, gorgonzola and chorizo

A big treat in perspective with minimal preparation time!

For two people:

Remove the "hat" from the pumpkin using a good knife (I used this one and it was perfect!). Empty the inside of the pumpkin (only the seeds and the soft flesh that goes with it and which you can reuse!).

Inside the pumpkin, place about 200g of a mascarpone/gorgonzola mixture, either pre-prepared or made at home. For cheese lovers, you can add a little more... Then add a few slices of chorizo ​​with the cheese.

Bake at 200° for about 40 minutes - the pumpkin should be tender (with a roasted appearance as in the photo).
