Start by browning your paupiettes in a frying pan with a little olive oil. After a few minutes, add the previously sliced ​​mushrooms. When the paupiettes are nicely browned, add 1 tablespoon of mustard, 3 tablespoons of balsamic vinegar, 1 tablespoon of veal stock to the frying pan, then cover everything with broth (possibly with a little white wine if you have some in your cupboards!). The paupiettes should be 3/4 covered with broth. And let simmer for about 45 minutes uncovered, turning the paupiettes from time to time. The sauce will gradually reduce and thicken... When it is nice and thick, add a drizzle of liquid cream (quantity according to your tastes).

Let it simmer for a few more minutes and serve piping hot with pasta or roasted winter vegetables. And enjoy!!
