Roasted Cauliflower with Spices and Peanut Sauce
At Amphitria, cauliflower is eaten either with peanuts or with a slightly spicy ingredient like chorizo! Here, we offer you the peanut version :)

Cut the cauliflower into slices and place them in a baking dish and pour over a good drizzle of olive oil, garlic, Espelette pepper, paprika, salt and pepper, and mix well. All the cauliflower should be colored (without being soaked in oil of course). Bake at 200° for about 20 minutes.
Meanwhile, in a bowl, mix a tablespoon of peanut butter, a little soy sauce to salt the sauce, and liquid cream (about 20cl, to adjust according to your tastes).
Spread the sauce on a plate, place a slice of cauliflower on top, sprinkle with a few pumpkin or flax seeds, and enjoy!
