Squid with parsley and candied shallots

A beautiful and tasty recipe that highlights squid!

Peel your shallots and cut them in half lengthwise. Brown them in salted butter in a frying pan, cut side down, and cover with a lid.

At the same time, chop some parsley and garlic, and flour your squid. In another pan, brown the parsley/garlic mixture in a little olive oil and butter for a few minutes, then add the squid over high heat. When the squid are golden, set them aside and pour a pot of liquid cream into the pan that cooked the squid. Reduce the cream with the rest of the parsley.

To serve, place a base of parsley cream sauce on a plate, add the shallots preserved in butter and then the squid!

A treat!
