🍓 Recipe for the Tricolor Pavlova (blue-white-red)
The perfect dessert recipe for July 14th! A tricolor pavolova with blueberries and raspberries!

📝 Ingredients
For the meringue:

4 egg whites (about 120 g)

200 g caster sugar

1 tsp white vinegar or lemon juice

1 tbsp cornstarch
For the filling:

25 cl of very cold whole liquid cream
-
2 tbsp icing sugar
-
1 tsp vanilla extract
For the tricolor topping:
-
125g raspberries or strawberries (red)
-
125 g blueberries
-
Some coconut shavings, meringue or white edible flowers (white)
👩🍳 Preparation of the tricolor pavlova
1. Prepare the meringue

Preheat the oven to 120°C (fan-assisted).

Beat the egg whites until stiff.

Add the sugar in three batches, whisking well between each addition to obtain a smooth, glossy meringue.

Gently stir in the cornstarch and vinegar.

On a baking sheet lined with baking paper, form a disc (approximately 20 cm in diameter), making a slight hollow in the center.

Bake for 1 hour 15 minutes , then leave to cool in the oven with the door ajar.
2. Whip the whipped cream

Whip the very cold cream with the icing sugar and vanilla until you get stiff whipped cream.

Keep cool.
3. Dress the pavlova

Once the meringue is completely cold, spread the whipped cream in the center.

Arrange the fruits harmoniously:
🔴 Raspberries/strawberries on one side
⚪ Visible whipped cream + coconut or meringue in the center
🔵 Blueberries on the other side
You can alternate colors in lines or circles depending on the desired effect!
💡 Tips

The meringue can be made the day before.

The pavlova is assembled at the last moment (just before serving) to keep the meringue crisp.

You can add a red fruit coulis for extra indulgence.
