Beetroot carpaccio, Granny Smith apples and feta

A healthy, vitamin-packed recipe, perfect as a starter or salad!

  • Peel the beetroot and the apple
  • Using a mandolin or a very good knife, cut thin strips of beetroot and apple and place them nicely on a plate or serving dish.
  • Crumble some feta on top, and add a drizzle of olive oil, a little lemon if you like, and some crushed pistachios! Delicious!
